New Year Brings Monthly Wine Pairing Dinners at Oyster House

The Delaware Avenue Oyster House in Beach Haven Terrace will offer monthly wine dinners to educate and enrich wine and food lovers in their pairing experiences. The first is Thursday, Jan. 18, at 6:30 p.m., presented by Orin Swift Cellars and featuring four 2015 vintages alongside a four-course meal by executive chef Steve Haggart.

A sneak preview of the menu reveals the first course introduces a Blank Stare Sauvignon Blanc, noted for its aromas of white peach, pear and freshly cut grass as well as stone, butterscotch and clove, paired with a French kiss oyster, freshly shucked, topped with yellowfin tuna crudo, scallion, ponzu and sriracha.

The second course brings a Mannequin Chardonnay, with “bursting aromatics of honeydew, honeysuckle and ripe peach … complemented by a hint of jasmine, pineapple and cream.” That goes with sweet shellfish bruschetta in lemon oil, with pine nuts and basil, served atop toasted brioche.

Third, a Machete Petit Sirah, with its “brooding hue and viscous consistency, powerful aromas of crème de cassis, boysenberry, and ripe cherries … complemented by a soft minerality and hints of dark chocolate,” comes with wild boar ragu over pappardelle with pecorino.

Finally, the smooth and supple Palermo Cabernet Sauvignon, with its “deep and luring aromas of raspberry and ripe cherry … intermingled with accents of star anise, five spice and freshly steeped black tea” accompanies dessert: dark chocolate mousse, drizzled with caramel, sprinkled with sea salt.
